Chef David Finlay

David Finley aka “Wolf” the Chef was born and raised in the Sunshine Country of Jamaica in the parish of Kingston. With 13 years of culinary experience, Wolf came from humble beginnings. His passion for food began in his family’s restaurant. There he learned the fundamentals of planting, growing and cultivating various types of produce and learned the craft of preparing and bringing food from the garden to the table. Faith’s Pen, a family owned and operated Restaurant in Moneague St Ann Jamaica is where Wolf perfected his culinary skill. He later became the Sous chef at Island Park Grill in Linstead St Ann Jamaica. Intrigued by the chef’s creations in the kitchen and inspired by their camaraderie, Wolf decided to begin a career as an apprentice chef and quickly absorbed everything his mentors taught him. He later attended the Moneaque Culinary Institute in Jamaica. After graduating at the top of his class, Wolf migrated to the US in 2002.

He became the Head Chef at Kitchen Berkshires in the New York Bronx. The Berkshire was not famous for its great location or service, but for the great food birthed in its kitchen by this dynamic Chef. Longing for a change, Wolf moved to Atlanta Georgia in 2006. Wolf became the Executive Chef at the Bahamian Breeze Restaurant in Atlanta, Georgia. True to character, Wolf is always challenging and pushing himself to forever expand his culinary creativity. It was at the Bahamian Breeze where he mastered his finest and most tantalizing dish, steam fish and Okra. Wolf now joins Island Cuisine as the Sous Chef. He brings with him an original style of cooking from traditional twists to innovative flavors; Chef Wolf takes fresh seafood with Island sensibility to a new level.



Chef Maffi

Blending an earthy approach a result of his rural upbringing with the influence of Italian simplicity, Garfield Sterling, more affectionately known as “Maffi the Chef” is renowned as one of the greatest Jamaican chefs in the area. Born and raised in Moneague St Ann Jamaica, Maffi has always had an affinity to the art of cooking. From the age of 10 until the age of 27 Mr. Garfield perfected his craft and culinary mastery at Faith’s Pen Restaurant, owned and operated by his mother in Moneague St Ann Jamaica. At the age of 27 Mr. Sterling traveled to the U.S Virgin Islands to continue to perfect his craft. From the womb, Maffi always knew he was created to please others with his gifted hands in the kitchen.
“I love food and love to cook, I cook food to please the palate and feed the soul”. Mr. Sterling graduated the New England Culinary School in the British Virgin Islands. From his humble beginnings, he became the Sus Chef at Pusser’s West Indies in the British Virgin Islands. He remained in this capacity for a 3 year tenure proving himself to be skillful and creative enough to become the Executive Chef. Mr. Sterling created masterful dishes that became an island favorite for tourists and islanders of all ages. His use of spices not only tantalized the taste buds it nourished the spirits of all bite after sizzling bite. Every amazing dish is rich in all the flavors of the Caribbean, everything is carefully prepared, well seasoned, and bursting with flavor. After skillfully mastering his craft, Maffi moved to the New York Bronx and worked as Executive Chef at Gabriel’s Jamaican Cuisine for a 3 year tenure.

Mr. Sterling longed for an environment where he was free to showcase his creative expressions so he traveled to Windsor Mill MD where he became the Executive Chef at Island Cuisine. It was here where his creativity was free to soar with such creations as reggae pasta, Blissfully Blackened Salmon, and the zestiest Jerk chicken in the area. Chef Garfield is excited to provide you with an unforgettable Island experience with his exotic menu and unsurpassed customer service. Chef Garfield has a deep affinity towards his Jamaican roots. It is clearly represented in Garfield’s imaginative dishes, which cross over into many different styles of cooking. When he has the spare time, Chef Garfield also enjoys spending time with friends and family.
